This is what we call porting, and that device has never been ported. If you want to learn more, here is the porting guide.

The boot to recovery when thinking about it (it was late) should have pointed me to the wrong Android version. Installed /e/OS version 1 (android 10) meaning unlocked bootloader and then installed UT.

Can Ubuntu Touch be installed on a Samsung Galaxy S10+ (Exynos) phone?

Yes-but-no. There was a port, but it's outdated and the porter has abandoned it. You can find the information here:
https://devices.ubuntu-touch.io/device/beyond2lte/release/xenial/

Can a Samsung Galaxy S10+ phone with Ubuntu Touch use VoLTE 4G?

No. Ubuntu Touch does not yet support VoLTE on any device (with a tiny number of exceptions).
Now I'm going to move this topic, because it's not about Waydroid. Welcome, by the way, and sorry that I don't have better news!

@arubislander Using a tablet also helps

Works just as well on my Pixel 3a.

Anyway, this is kind of far from the original questions

I was thinking the same, so I will stop now.

There seem to be a sequence of adding/removing fingerprints that leaves the unlock screen funky, so no pin entry keyboard is shown. I don't know how to unlock my phone now. Fingerprint unlock seems to work 'for a while' and then does not. It is a phone for playing, so I'll end up resetting it again. I'll try a usb keyboard before resetting.
The latest ota upgrade left the phone on the Samsung banner screen. I re-installed from zero to recover it (recovery mode worked, so other strategies might have worked)
