f.e. a Google Pixel 3a would do the job

It would! I use the Oneplus 5t and that is also a fine device for UT. Just keep your eye on the top of that list and see what's on offer.

Depending on your use case you can remount the root partition in RW and then mount the SD card.
But you need to understand what you are doing and playing with links in order to get something to work.
Of course prior to that the SD card should be formatted properly.
But as I mentioned, booting directly from the SD might be too difficult.

To solve this, I fold a piece of paper and when inserting the cable, put it on the bottom of the cable connector as I insert it. This holds the cable in tight (all the USB contacts are on the top of the connector) and the phone won't lose communication with the PC if you move it, nudge the cable, breath etc.

Sadly no as stated there:
https://devices.ubuntu-touch.io/device/s3ve3g/

Note: There are 2 variants of S3 Neo, GT-I9300I and GT-I9301I, called also S3 Neo+. Obviously only the latter one is compatible with this port. We are working on determining if we can support Gt-I9300I as well.

But you can try and contact the porter and work with them to try and support your device as well.

The Ubuntu side of things is fine since video recording and playback works well on other devices.
Please do understand that currently there will be not much investment into this device, because there is only a handful of users, its rather slow compared to others which makes the Ubuntu Touch experience very limited, and it is based now on Android 5.1 and a very old kernel, which will create a ton of issues for the 20.04 upgrade.
After we upgrade to 20.04 we will focus on devices mainly based on Android 9 and above, and only after all those that we want to lift up, there will be time to look at older ones.
Please understand that, we have so limited resources, and we need to look on hardware that people want to buy in a shop, with preinstalled UT, rather than only having support for devices that you can buy as used. Our partners are targeting Android 10, 11 and 12 now, and we need to expedite our efforts to support those hardware pieces.

Yes. To be more precise, with no app opened, it opens app drawer (as app launcher is always on screen), with an app opened, it opens both app launcher and drawer.
