I would like to dump the iPhone and purchase one of the compatible phones for Ubuntu Touch. I have not looked at any particular make yet. 
 Is it possible using Touch to not use a carrier in my case AT&amp;T and run the phone off a Wifi System only?
 Could I use my same cell number?
 Other than the invasion of privacy by Google and Apple are there any other benefits?

Yes it is as simple as swaping the SIM card.<br />
About information, there is not a single place, sorry.</p>
<p dir="auto">There was a project about a beginners' guide, but I'm not sure where it landed.<br />

Once I purchase and install Touch do I then swap out my sim card from the iPhone and put it into the phone with Touch and start making and receiving calls or is it more involved?</p>

As far as I know you cannot keep your cell number without a carrier.<br />
If you're thinking about having a carrier plan but only using calls over wifi, this is not supported by Ubuntu Touch because of the different implementations made by various providers.</p>
<p dir="auto">But you can use your phone over wifi without any SIM card.<br />
Making calls using Axolotl (Signal), Fluffychat (Matrix) or Teleports (Telegram) is not yet possible but it is a goal all those apps wish to achieve.</p>
