Sony Xperia X F5121 - Stuck on Android 7.1.1

Hi there,
Recently I purchased a second hand F5121 for the purposes of installing Ubuntu Touch. The one I have received is running Android version 7.1.1. I Note that the device page on the Ubuntu Touch website says I need a minimum of version 8
"Ensure you have upgraded the stock firmware at least to Android 8, else you can't flash the OEM binaries for AOSP. It is best to ensure that you have all the latest firmware installed."
I know this device /can/ get Oreo however whenever I check for updates on mine it says the device is completely up to date
I suspect this may be due to the device being out of support. Does anyone have any advice or guidance? It would be very appreciatedCheers

@drkebab See if you can unlock the bootloader. If you can good. If you are not allowed too, sell the phone, it is no good for any custom ROM or UT. If the bootloader is unlocked, you can update manually to Oreo.

I have unlocked the bootloader with a code provided by Sony. This may sound dumb but where do I find a stock Android 8.0 rom for this device?
I have Sony's flash tool and will use that however a bit stumped with the rom.It's been a few years since I've done anything vaugley technical with an android device and remember next to nothing

The port for UT is based on Halium 7.1, which is based on Android 7.1, so it should be fine installing. Read the instructions carefully and back up the TA partition or you won't be able to go back to Android.

In my opinion, you won't get any more official updates if the bootloader is already unlocked. See here; https://developer.sony.com/develop/open-devices/get-started/unlock-bootloader/
And besides, the <My Xperia> function must be disabled before you can unlock your device.So nicely before unlocking the bootloader upgrade the device to <OREO> (Android 8).
If the bootloader has not yet been tampered with, possibly perform a factory reset. And then request the updates via wifi, of course.
If the bootloader has already been tampered with, perhaps lock the bootloader again, reset to factory default, and then try to update to <OREO>.
