Do you already have tested Ubuntu on a Raspberry Pi? I remember using Ubuntu Mate on a Raspberry Pi 2, which was not very performant, but fairly usable. I wonder how it would be with Unity8 and if there would be a big difference in performance between Raspy 2 and 3.
