If I buy a google phone and then install Ubuntu Touch on it, does it fully remove the google OS?

I've been considering for some time moving to linux on my phone since I don't use social media or play games on my phone and I would really like to not be recorded all the time. My biggest concern is just that I am able to have a phone number with which to send and receive texts while being private. To that end, Ubuntu Touch doesn't make much sense to install on a google device if it keeps any google software, so I have to imagine that installing Ubuntu Touch doesnt install it on top of google, but rather removes google first. Before I make any monetary commitment, I just wanted to confirm that google software is completely wiped from the phone or ask if theres a way to completely wipe it and then install ubuntu.
        Thanks!

@muellw Only the driver layer that allows the hardware to function remains. If even that bothers you, there is always the Pinephone either with Ubuntu Touch, or PostmarketOS, or Mobian

Or other mainlined phones supported by PostmarketOS, Mobian, Kupfer, or Lune

@rocket2nfinity Thanks! After reading the documentation I figured that was probably it. I definitely do not mind the drivers as those drivers arent actually monitoring me.
