Here is APN parameters for my provider:

        https://mvno.dmm.com/apn/android.html

Sorry for Japanese but that is only page in the Internet

In short I have to set:
        Name: DMM Mobile
        APN: dmm.com
        Auth type: PAP or CHAP

        Available parameters for Ubuntu Touch:
        Name, APN, Username, Password

        Mostly different parameters

Also I can't set carrier. DMM mobile is a MVNO using Docomo major carrier networks in Japan. In result I able to set only "Automatically" and None carrier is displayed in this mode.

Should I use vim, couple shell scripts and a C++ custom headers to be able set a basic feature like APN?

@rzlvmp have you tried to remove the pre-filled APN ( swipe right ) and create a new one ?
A reboot is needed too iirc
