but as a self-confessed complete novice I dare to ask:
I have a Asus Zenfone Max (M2) ZB633KL cell phone and would love to try the freedom of using it with Ubuntu Touch. Is at all possible that the port which is available for Asus Zenfone Max Pro (M1) ZB601KL/ZB602K would work with my phone? (for comparison of specs for the two models please see: https://www.gsmarena.com/compare.php3?idPhone1=9437&idPhone2=9173).

No, the port won't work. It is not just about the hardware, it is about the bootloader and Android set up.
Check this out as an alternative (degoogled Android).
