Making a custom private Image

Hello,
we would like to customize an image to our needs (e.g. set certain custom settings, like disabling MAC randomization, pre-installing custom applications, device management etc.) and prevent that any of these customizations are lost if an update is done.
Are there any instructions on how to setup an own update server and make a custom build which will only get updates from that server?
