after installing ubuntu touch do i have to unroot my smartphone or leave it like that?

if by "unroot" you mean relock the bootloader, DON'T do this, no.

Just to avoid all possible confusion: you do not need to root your phone in order to install Ubuntu Touch. You just need to unlock the bootloader, and like @Keneda said: leave it unlocked.
