I had seen it's possible to install Ubuntu Touch in the redmi 9 global version, but if I tried to install in the India Version (CATTAIL) will it work?

I would not count on it, there is a reason why it specifically lists the global version. And trying to install on a device that is almost but not precisely the right one is a great way to brick it.
