@ragz I have used Ubuntu Touch on and off for the past year or so on different devices, although I am not currently using it (I am running CalyxOS on a Pixel 4a).
Phone functionality worked fine for me on an AT&T MVNO when I had my SIM card in a Nexus 5 and later a OnePlus 3 running Ubuntu Touch. The biggest hurdle to get over is the limited applications available on Ubuntu Touch.
Your best bet is to buy a well-supported phone (like a Nexus 5 for something cheaper, or a OnePlus 3/3T for something newer and more powerful), install Ubuntu Touch on it, and try it out.

So I can insert the sim card from my iphone into lets say the nexus 5 with touch, try it out, if I dislike then reinsert the sim card back into my iPhone and no harm done correct?

Looking for Americans in the States who have dropped their Apple and Google phones and opted for UT. Like to know if they had any issues with the carriers like AT&T, Verizon, etc pertaining to connections?
Any issues with texting, pictures, emails, etc? Losing cell connection or WiFi?
Perhaps it is untested in the USA and more common in the EU.

The app store in UT is called Open Store is that correct?
Are there Google products in the store and if so why is this?
How does one safeguard himself/herself when considering to install an app that it does not belong to a subsidiary of Google and thereby tracks and mines?
UBports provides a list of phones compatible with UT. Will some of the pioneers provide me their feedback on the experiences good and bad on various phones such information as battery consumption, does it have a sim card, charger, storage capability, cpu, etc. Anything which is of value.

Please allow me this question for I do not know where else to ask it. It's basic and mean no insult to anyone or anything.
I have been an Apple user since iPhone 5 and was not aware at the time of how deceptive their and Google's OS are which is why I am now looking at installing Ubuntu Touch in one of the "endorsed" phones which UBports recommends for that OS.
If I close out all the apps on my iPhone and they are not running to the point that I that is on the mobile phone desktop is Safari, Maps, Email, Phone and turn off Location Services and Siri would that stop my data being sent to the deleted apps and to Apple? Is my phone still sending information unknown to me to Apple?
What is it about Ubuntu Touch OS that does not send any data to anyone? If I use the default browser of Touch will that still send my information to anyone?
My phone will still be pinging off the local cell towers and my cell server knows my activity so how does Ubuntu Touch help me?
I ask this in all sincerity and ask for an honest response.

@applee That certainly clarified a few questions. Once I purchase and install Touch do I then swap out my sim card from the iPhone and put it into the phone with Touch and start making and receiving calls or is it more involved?
Is there somewhere on this site where I may read basic information explaining the reasons going to Touch and it's capabilities?
I reside in the USA and using an Apple iPhone for the past 12 years or more and my carrier is AT&T. I would like to dump the iPhone and purchase one of the compatible phones for Ubuntu Touch. I have not looked at any particular make yet.
Is it possible using Touch to not use a carrier in my case AT&T and run the phone off a Wifi System only?
Could I use my same cell number?
Other than the invasion of privacy by Google and Apple are there any other benefits?
