I don't have a phone yet and I'm planning on going with OnePlus One so I can use Ubuntu Touch. However:

1- Can Ubuntu Touch recognize all phone operators?
2- Does Ubuntu Touch have Turkish language support?
3- Does Ubuntu Touch have a browser that can block ads?
Also why it's only available on 11 phones?

Fast answer : yes, yes and yes

Just a bit longer : 1/ it depends on whether or not the phone handles the right bandwidth
And I think there are some few hiccups with some operators but I don't know.

Why only 11 phones, because porting to an android device means adapting to it's kernel and blobs and it takes time and resources. And UT uses Halium to support an android phone so it requires Halium support for the phone to be ported to Ubuntu Touch.

@AppLee It seems like it has everything I need (also the OpenStore has some cool games and emulators). Also which browser has ad blocking?

The adblocker is not in the browser, it's system wide.
It's an app called uAdBlock https://open-store.io/app/uadblock.mariogrip

[Edit] The OnePlus One is good phone and mostly well supported. But have you heard of the PinePhone ?
I'm not trying to sell it, but if I decided to jump in 2020, I'll wait few month for a brand new device.
The port is not done and there is still a lot of work until OTA12 is ready, but I think if you can wait a couple of months it'll worth it.
              Just my two cents.

I don't think I will be able to use Ubuntu Touch.
I found out that OnePlus One was never released on my country 😞
PinePhone is a new product and I don't like to be an early adopter for things. And Nexus 5 is really underpowered (because it's... you know... old). I think I'll have to go with LineageOS and cross my fingers for postmarketOS.
Edit: Nexus isn't as weak as I remember it. It might be a good choice but I'm not sure.

                  I have a Nexus5 actually 🙂
                  And it works fine.

Plus what you may think underpowered for android may not be with Ubuntu Touch.
If you're not an early adopter then it's fine, some people recommend the Meizu Pro 5 but it's hard to find ; maybe not in your country though.
The main limitation with Nexus5 is the GPU, we can't use it and it makes it painful to watch any video with the phone.
That aside and the know baby-battery, it's really great.

Eh? It's the same SoC as in the Oneplus 1, but it has 1GB less RAM, because they are both, you know, old. Also, they are incredibly cheap to get now, because they are 7 years old.

@linuxadopter It's nothing to do with the GPU. That statement is a misunderstanding. There is an issue with video playback on Nexus 5, but it's not clear what exactly the issue is.

@dobey I believe @AppLee mean morph browser is not using GPU and that is what "makes it painful to watch any video with the phone".
It's not about the inability to play video with media player on N5.

I'm quite astonished that the problem resists you, given your extremely fussy knowledge!
And when I say fussy knowledge, I mean it as a compliment.

@libremax Morph usage of GPU has nothing to do with device though. GPU acceleration is disabled with QtWebEngine regardless of device, but that doesn't make video playback any more problematic really.

To be fair, I don't really know much about the lower depths of the Android/libhybris bits, which is where the video issue occurs. If someone understood well enough what the problem was though, I'm sure it would have been fixed already.

Would a Oneplus 3t work for you? It's currently being ported to Ubuntu Touch, and you could run LineageOS on it until it's stable on UT....pretty decent specs and they can be found for a good price.

Thanks @dobey for the clarification btw. So it's more related to libhybris and android stuff.

@Photojoe4 OnePlus didn't start selling phones on my country until last year. I don't know can I use Turkish phone operators on it.

@linuxadopter There is an issue specific to N5, video play back is not possible with media player : https://github.com/ubports/ubuntu-touch/issues/1092
With N5, you need to play videos with UTmedia.
