Indeed, even if someone need accessing the phone physically to do that.
Other thing, if logs are never deleted, it's a matter of time before storage fulfilled, no ?
Are logs deleted after rebooting?

No, they are not deleted.

I've noticed overall there are a lot of logs (and the Logviewer is flooded). It might be good for debugging but how good is it for the ssd's on the phone actually?

I put it there even though it seems to be a general problem of systemd/journald.

@muskist Thank you for that catch, just wanted to add a small note the Logs should be cleared on reboot if devel mode is not enabled.
